String Hopper
String hopper or Idiappam is a special traditional Sri Lankan dish made simply from white or red rice flour. The flour dough is squeezed into a press to form thin rice noodles and pressed onto a flat mesh-like disk to be steamed. This particular cooking style is called bamboo cooking. In Sri Lanka, this is usually served for breakfast or dinner with various curries and coconut Sambal. String hopper can be a gluten-free meal option.
